These Banana and Oat Pancakes are a totally delicious weekend breakfast. We add Greek/natural yoghurt (boosts the protein content) and mixed berries (loads of nutrients) so breakfast starts with 5 of our 5-a day and we’re full till lunch.

This soup takes longer than the usual 15 mins to make…although most of the time is roasting and then sieving it at the end but it’s a fabulous way to use up tomatoes that are a bit past their best or have gone a bit squishy.

The flavours in this seared tuna recipe pack a real punch. They actually make my tongue tingle! It’s great the following day as a packed lunch too…just add lettuce, tomato, cucumber, potato, olives and beans to make into a Salad Nicoise

When asparagus is in season try using it to make this delicious CHICKEN, ASPARAGUS & MUSHROOM PIE. It’s super easy and quick to make. Contains 3 of your 5-a-day and tastes really good. low in saturated fat. It is a great
source of omega-3 fatty acids. Research shows that diets rich in omega-3 are linked to lower risk of heart disease. Omega-3 is important for brain health too.

These BLUEBERRY FLAPJACKS take just four and a half minutes from starting to getting in the oven. They contain less than half the quantity of ‘butter’ (I use coconut oil) and 2/3 less ‘sugar’ (I use maple syrup) than traditional flapjacks.
They contain 250g blueberries, which contain Fibre, Vitamins C, K and Manganese. Manganese is needed for bone formation. So if you want a delicious flapjack….. this is a much healthier version than ‘normal’ flapjacks.
