This strudel is totally delicious. It contains protein from the lentils, 3 different veggies – onions, mushroom and spinach and is full of flavour. I sometimes add feta too, which adds a creamy, salty flavour that complements the vegetables really well.
I made this video in a makeshift kitchen (as ours was being renovated) – which shows how easy it is!
