Za’atar Roasted Carrot & Sweet Potato Soup

Za’atar is a middle eastern herb made from sesame, sumac, oregano, thyme, cumin and coriander. It’s got a strong herby smell and tastes delicious.

You can add some extra sumac before roasting if you like or sprinkle sesame seeds or extra za’atar on top of the soup instead of the crispy carrot peels.

You could also brush some pita bread with olive oil and za’atar, then bake and cut into ‘fingers’ to go with the soup too….. so many delicious options
