These Courgette and Spinach Fritters are packed with vegetables and are very filling and tasty. I serve them with poached eggs and a lemon & garlic yoghurt on top. I originally made this quantity for 5 but 3 of us managed to polish all of these off! Recipe slightly adapted from Smitten Kitchen
