This smooth and warming Spinach, Coconut and Chilli Soup is a delicious, vibrant, warming soup. The coconut makes it really smooth and creamy and the chilli adds heat. The spinach is a great source of Vitamin K that is needed for blood clotting and maintaining bone health.
Once, I forgot that it was spinach not broccoli and made a new soup – that is a great way to use up broccoli that is slightly past its best. Check out my other post for that recipe!
